Plum frangipane tart
Ingredients
6 plums
200g soft sugar
250g butter
150g ground almonds
100g plain flour
4 eggs
1tsp almond essence
50g flaked almonds
Serving of whipped cream
Method
1. Halve and de-stone the plums
2. Using a large ovenproof frying pan, use the sugar and a small amount of water to make a caramel
3. In a food processor blend the soft butter and sugar until creamed and then break and add the eggs one at a time
4. Remove from the processor and fold in the almonds and flour to complete your frangipane mix
5. When the caramel is ready, add your flaked almonds to the bottom of the pan and the halved plums face down
6. Pour over the frangipane mix and bake in the oven for 25 minutes at 180 degrees or until golden so that when you pierce it with a knife it comes out clean
7. Leave to stand for 5 minutes and then turn out onto a plate
8. Cut and serve with whipped cream! Yum!
